Mango Cheechako Taco Shrimp


12-15 peeled, deveined raw shrimp

1-2 tsp Twisted Gourmet Cheechako Taco Seasoning

1/2 sweet red bell pepper

1/2 diced ripe mango (I used Atualfo)

1/2 cup diced ripe pineapple

Handful of fresh cilantro, chopped

1/2 lime, juiced, lime for garnish.

Vegetable oil


Heat oil in frying pan over medium high heat. Add bell peppers, sautee for 2-3 minutes until softening. Add Cheechako Taco seasoning, stir. Add mango, pineapple and shrimp. Saute, stirring frequently. Squeeze lime over pan while cooking, and add about 1/2 your chopped cilantro. Sautee a few minutes until shrimp is opaque and firm, and vegetables and fruit are nicely softened and have released their juices.

Serve over rice, in tacos or solo.  Garnish with a bit more cilantro and a slice of lime. Healthy, quick and really really delicious. The sweet pineapple and mango with the tartness of the lime and the slight heat of the taco seasoning really sets off the shrimp. This recipe should make it into your regular rotation.Enjoy!!
